Banana Walnut Cake/Bread

Ingredients

Dry ingredients:
2 cups whole wheat flour 
2 tsp baking powder 
1 tsp baking soda
1 tsp cinnamon powder
1/2 tsp salt
1/2 to 1 cup walnuts roughly chopped

Wet ingredients:
3 very ripe bananas 
1 cup brown sugar
1/2 cup olive oil/melted butter
1/2 cup thick yogurt/whole milk 
1 tbsp vanilla extract 

Step 1:
Preheat the oven to 180C/350F. Line 8×4 or 9×5 bread tin with parchment paper or butter the sides of the tin.

Step 2:
Mix and sift the dry ingredients in a large bowl and set aside.

Step 3:
Add the bananas and sugar in a mixing bowl and mash them nicely. Add the oil and yogurt and combine well. Lastly add the vanilla extract and give it a good mix. Make sure the sugar is completely melted and incorporated with the other wet ingredients. 

Step 4: 
Combine the wet and dry ingredients and fold them using cut and fold method. Once there is no trace of dry flour transfer the mixture to the prepared bread tin. 

Step 5:
Bake the bread for 40-50 minutes at 180C/350F. Do not open the oven for the first 30 minutes. Once the 30 minutes is up rotate the bread tin and bake for another 10 minutes. At this point run a toothpick in to check if the bread is cooked completely. If the toothpick comes out clean remove the bread from the oven and let it cool. If you find the toothpick wet, bake for another 10 minutes. Cool the bread completely before slicing.
