Ingredients
1 cup All purpose flour
3/4 cup wheat flour
1/2 cup almond flour
¹/² cup powder sugar
¹/² cup brown sugar
1 ¹/² cup dark chocolate chips
1 cup or 2 sticks butter (unsalted,room temperature)
1 tbsp pure vanilla extract
1/2 tsp salt
1 tsp baking soda
1 to 2 tbsp milk if needed
Step 1:
Preheat the oven to 350F. Prepare the baking tray by lining a parchment paper.
Step 2:
Add the room temperature butter, powdered sugar and brown sugar in the stand mixer and mix on medium low speed till it turns soft and creamy. At this point add the vanilla extract and mix till it’s well combined.
Step 3:
Sift the flours, salt and baking soda in the butter mixture and run the mixer for 2 to 3 minutes on medium low speed until the wet and dry ingredients are well combined. If you feel its dry add 1 tbsp milk at a time and combine well. Now add the chocolate chips and fold it into the dough by hand (using a spatula). Do not over mix the dough.
Step 4:
Using a cookie scoop or a regular spoon scoop the dough and place them on the lined baking tray! Make sure they are at least 2 inches away from each other, as it will spread as it cools. Bake them for up to 12-13 minutes, rotating the tray half way through to make sure the cookies bake evenly.
Once the timer goes out remove the cookies from the oven and let them cool down a bit and enjoy! Store the cookies in an air tight container for up to a week.
